Jim’s Favorite Vegetarian Dish~~Smoked Tofu and Bean Burritos!

Smoked Tofu Burritos DinnerOn special days like Father’s Day, I always try to do something special for Jim.  He was such a great dad!  The Smoked Tofu and Beans Burritos is his favorite dish.  One Jim gives a 10.  I got the recipe from the Vegetarian times about 14 years ago when I first became a vegetarian.  It was one of those recipes that helped me stay on the diet.  I hope you all enjoy this!

This makes 8 burritos.  And it should take you about 30 minutes to make.  Something that is good to do on a work night.

Ingredients

7 ounces of smoked tofu, see Note.

2 cups  of refried beans,  see Note.

8 ounces, grated cheddar cheese.

8 whole wheat tortillas

1 1/2 cups of a tomato based salsa, how hot you want it is up to you!

 

Directions

Preheat oven to 375 degrees.  Spray a 9 inch x 11 inch pan with cook spray.  Set aside.

Burrito AssemblyTo assemble, lay out the tortillas on a flat surface.  Put about 1/4 cup of the refried beans on to have of each tortilla.  Top that with two strips of the smoked tofu.  Top that with 1 ounce of the grated cheese.  Starting from the half with beans roll into a burrito.  Place with the flap down.  Keep doing that until all burritos are in the pan.  Top with the salsa.  Make sure you coat all the burritos.  Place in over for about 20 to 25 minutes or until heated through.  The edges of the tortillas will be slightly crisp.  I love that!

Note:

You can purchase the tofu at your local health food store or at places like Trader Joe’s or Whole Foods.  Slice tofu block Smoked Tofu Black Bean Burritoscrosswise 8 times and the cut each piece lengthwise into 3 slices.

Store bought beans are good on a work night if you are in a hurry or just tired.  I make my own refried beans.  I throw a can of black beans into the blender.  Add 2 cloves of chopped garlic.  You can add more or less.  It’s up to you.  Finally, I add a chipotle pepper in adobo sauce.  I add maybe 1 or 2 teaspoons of additional adobo sauce.  Again, You can add more or less.  However hot you want it is up to you. Then puree the beans until smooth.   I heat some olive oil in a nonstick pan.  Add the beans and cook at medium until you get the consistency you want.  Put aside to cool a few minutes.
