Caramel Chocolate Walnut Bar Cookies

Caramel Walnut Pecan BarsI was going to a lunch today with some of my favorite people.  It was pot luck.  Thinking about what to bring, I wanted to do something fast and easy.  But it had to be to die for.  After all, my friends deserved that!   Easy decision.  Caramel Chocolate Walnut Bars.  I have making these for years.  I got the recipe from a magazine put out by Land O Lakes butter.  So you know there has to be a lot of butter in it.  LOL!

These chocolate walnut bars are baked with brown sugar, butter, pecans and chocolate to make unbelievably scrumptious bars.  And like I said, super fast and easy!

You start off with a cookie crust of flour, butter, and brown sugar.

Cut in the butter till you have peas sized pieces.

Make the caramel size.

Put it together.

Pop it in the oven.  Bake.  Then put on chocolate chips when you take the cookies out of the oven.  How easy is that?

2 cups all-purpose flour
1 cup firmly packed brown sugar
1/2 cup Land O Lakes® Butter, softened
1 cup pecan halves

Caramel Layer

1/2 cup firmly packed brown sugar


1 cup real semi-sweet chocolate chips



Heat oven to 350°F.Combine all crust ingredients except pecans in bowl. Beat at medium speed until mixture resembles fine crumbs.

Press onto bottom of ungreased 13×9-inch baking pan. Place pecans evenly over unbaked crust.

Combine 2/3 cup butter and 1/2 cup brown sugar in 1-quart saucepan. Cook over medium heat, stirring constantly, until entire surface of mixture comes to a boil. Boil 1 minute, stirring constantly. Pour evenly over pecans and crust.

Bake 18-22 minutes or until entire caramel layer is bubbly. (Do not overbake.) Remove from oven. Immediately sprinkle with chips; allow to melt slightly. Swirl chips leaving some whole for a marbled effect.

Cool completely; cut into bars.
