My Week In The Blogosphere

A Message From Galveston BeachThis was a week for food. I really got into Bastille Day(France’s July 4th), which was on Tuesday. You know the French. Meals are very big in their culture. And their meals revolve around the family. That and the fact that I have eggplants out the wazoo and a LOT of Basil, I did a lot of cooking.  So you are going to see a larger recipe roundup than normal. I hope you enjoy them.

Over the next week, I will be posting some eggplant recipes. The eggplant is a highly underrated vegetable.  I am posting a simple casserole for when you need something simple.  Also, eggplant Parmesan.  I want to give you ideas on how to use some of that pesto that I made last week.  I think you will like what you see!
