Sorry I am so late in posting my week! Did you ever have a weekend it was wall to wall events and meetings? That was my weekend. Tonight was the first time that I could sit down for any length of time.
First off, It was Jim’s birthday. I am very lucky that he’s my husband and I want to do something special. We spent most of yesterday doing whatever he wanted to do. Biking and then a movie. Then I made his favorite meal, Smoked Tofu & Bean Burritos.smoked tofu and bean burritos
I live in a place where we really enjoy food! We love to get together for breakfast. If there’s a meeting you will always have someone bringing something to eat. With all the talking we do, we have to keep up our strength some how! LOL!
Every last Friday, we have a pot luck dinner called Final Friday. It’s an event that was started awhile back, where we go to somebodies home with our favorite dish. We eat and then we have a special speaker. This month is was a lady who came and talked about the sea turtles. It was pretty interesting. Read the rest of this entry »
These are delicious, beautiful muffins. I serve them during the holidays or anytime cranberries are available. The leftovers always make good breakfast treats. Through the years I’ve tried many cranberry recipes for bread and muffins, but this remains my family’s all-time favorite!

This is a wonderful dish. I make something like this myself for when I have guests coming over. Or if I have an access of red peppers in the garden, I will make this up, keep in the refrigerator until I want something simple and delicious. Serve it with French Bread and a glass of white wine. Lots of times it’s so hard to decide what to have for dinner. It’s even more difficult, if you are changing diets. Like going from a meat eating diet to vegan. The Vegan Flavorista has 10 wonderful ideas for dinners. I especially love the peanut noodles with the Dragon peanut sauce. I love things spicy!

This recipe looks wonderful. Easy to make. So often, the falafel you get in restaurants are deep fried. They are way too greasy. These look to use very little oil. I have to try it!
