Here is this week’s muffin. Banana Nut! I made if for friends who said that it was one of the best muffins they ever had. The muffins are so moist and delicious. And they have an incredible lightness to them that you don’t see in a lot of muffins. I think it was due to all the bananas in it. And this muffin is definitely not too sweet. Jim doesn’t like a lot of sugar. Someone also said that this reminded them of banana nut bread! The best all worlds?
Banana Nut Muffins
4 medium bananas
1⁄2 cup white sugar
1 teaspoon baking soda
1 teaspoon baking powder
1 1⁄2 cups all-purpose flour
1⁄3 cup melted butter
1⁄2 teaspoon salt (optional)
1/3 cup of nuts (your favorite type, mine are walnuts)
1/3 cup of chocolate chips or raisins(optional)
Mash bananas, add sugar and the slightly beaten egg.
Stir in melted butter.
Stir in dry ingredients(I mixed them before I added to liquids)
Spoon into greased medium size muffin pan (you can use paper muffin cups inside pan).
Bake 20 minutes at 350F degrees – 375F degrees.
You can use 1/4 cup of egg beaters instead of a whole egg. I baked my muffins at 350F.
