Butternut Squash, Ginger and Pear Soup

It’s getting to be soup weather even here on the Gulf Coast!  We are having a cool spell right now.  Temperatures in the low to mid 80s during the day.  At night, it’s around 72.  What’s really good is that the humidity is low.  So the air feels crisp and cool for us.


We make a lot of cold soup in summer.  Hot soups like this butternut squash soup are a wonderful change.  I love the idea of the ginger.  It really gives the soup a kick.  And we like kick in our meals!


I talked about how Jim loves soup.  It will be great to have more variety in what I do.

    We didn’t have that “cool” spell for very long in So. FL., 90* down to 87* for about 3 days – but you are so right about butternut squash for soup!! I have a great recipe for a cold butternut soup, but guess I’ll save that for next summer.
