soup of the week: butternut, corn, and lemongrass

Starting tomorrow evening, we are going to pretty much be keeping close to home for the weekend.  We have the Biker Rally coming to the island!  Tens of thousands of bikers descend on us the first weekend of November every year.  I love these people.  They are really pretty sweet.  The noise is not so good though.  We end up shutting the windows and putting on the a/c or heat.

 

This weekend, it looks like we will be needing heat.  It’s going to get down to the 50s to 60s.  That’s pretty cold for us this time of year.  Right now it’s 79 degrees on the island.  I am not looking forward to it.

 

So when I saw this recipe, it was a happy coincidence!  Hot!  And I love the idea of butternut squash and lemon grass.  Sweet and creamy with a kick.  I hope you can try this!

    Interesting combination of veggies. I like the lemongrass in it too! Sounds delicious!
