Glad to see you back!  And a new recipe.  I see that you have been doing a LOT of posts on running lately!  Congratulations on your news.  A move is always fun!  And going to grad school?  Good luck.  I know that you will love it.

 

This recipe looks wonderful.  I love kale and butternut squash.  I do have a question.  With the tempeh is there a big difference in the texture of the bacon and the regular?

 

This salad looks great for a Saturday lunch after biking.  Guess what Jim is getting this weekend!

    Now, for your question: the texture is different between tempeh bacon and real bacon. You definitely want to make sure you crisp the tempeh bacon by frying it in olive oil (or you fave cooking oil) to give it some texture – you’ll never achieve that nice crunch you get from crispy (real) bacon. The tempeh bacon is more like “floppy bacon.” Maybe you could bake it if you really wanted to get more crisp texture? I haven’t tried it though. The flavor is great, and it really adds a nice smokiness (and some protein!) to this salad.
