I love sweet potatoes and what a wonderful way to make them. This is much better than the sweet potato dishes that soaked with margarine and covered with marshmallows. I love how the roasting brings out the natural sweetness of the potatoes!
Sweet Potato Fries ~ Cook time: 15 minutes | Serves: 2
Sweet potato fries are sweeping the nation! You can find these delicious fries on almost every restaurant menu nowadays. Healthier than their regular potato counterpart, sweet potato fries are just plain good.
This is a savory version of sweet potatoes as opposed to the sweet version you may be used to when Thanksgiving rolls around. I lightly pan fry them with lots of spices to send them over the top.
2- sweet potatos, peeled and diced
3- tablespoons of garlic powder
2- tablespoons of black pepper
2- tablespoons of salt
1- tablespoon of paprika
3- tablespoons of olive oil
Peel the potatoes, then cut them in half from root to tip.
Cut each half into matchsticks.
Then dice ’em up!
Throw the potatoes into a large mixing bowl.
In a small bowl, combine all of your spices and mix together.

This looks so yummy! While I am not a vegan, I do like vegan recipes that tend to be healthier and are colorful. Have you ever noticed how much more likely you are to want to taste something that is made of pretty colors?
I look for ones are more in the mainstream so I can serve them to people who are not total vegetarians(mainly my husband). This spinach and mushroom enchilada dish fits the bill!
Spinach & Bean Enchiladas with White Mushroom Sauce
Enchiladas come in so many varieties with different fillings and sauces. My first enchilada experience was when I was a teenager. A cousin’s ex had made them and her version was the popular shredded chicken with the Campbell’s condensed soup mushroom sauce. My veganized version was a play on my original experience. This recipe is creamy and absolutely delicious and a must try. It may seem complex but is fairly simple, I utilized my nutribullet for the sauces and the Cilantro-Lime Jasmine rice was very simple to make, recipe included. Top with creamy avo-crema sauce. Enjoy!

These little bites are adorable. Something that might be a great dish to make with the little tykes!
First of all, wow.
I hate to toot my own horn or anything but – wow. These are delicious, bite-sized pieces of heaven.
Everyone I have ever served these to has loved them. I mean, come on…who wouldn’t? It’s Apple crumble, meets cheesecake, meets breakfast.
I KNOW RIGHT ?!
Personally, I like them bite-sized but you could totally just make them normal size. It makes for a phenomenal weekend brunch! Just alternate layers of pancake and cream cheese, then when you’ve decided that the stack is sufficiently high (death by pancake tower isn’t so bad now, is it?) just sprinkle over the crumble.
This is definitely going into the list of my favourite recipes of all time and it’s wayyyyy too good to keep to myself. So if you excuse me, I’m going to wipe the drool of my face and tell you how to make them.

I had been in the garden weeding around my pepper plants. I love the colors of peppers. I have a whole bunch of them that are bright red. I saw this dish and thought ‘how beautiful’ and it looks so yummy! My only problem is that my peppers are jalapenos!
I went to a sporting event last night.
On a school night! *Gasp*
I have been trying to be more fun lately. This includes, but is not limited to, picking up a new hobby, making a new friend, accepting more social invitations, and occasionally venturing out of my cocoon on school nights. It’s been terrible.
What’s wrong with a nice routine? Why can’t I just come home from work and exfoliate, read 100 pages of my novel, & binge-watch two hours of Real Housewives??? What is so “fun” about the outside world anyways?? Like, I go to this sporting event. I have a wonderful time! I’m thinking, “I can do this, I can go out during the week occasionally!” Then, I’m driving home & I look in this restaurant & there are about 10 people my age at a table simply enjoying themselves. At 10:20 pm on a school night!!!…
