One of the best things about going vegetarian was finding out about roasting vegetables. Roasted vegetables are definitely a treat. The roasting caramelizes the sugar in the vegetable. And the intensity of the flavor comes out.
I never thought about roasting fruit though! This is something I will try. Especially, with the peaches starting to ripen on my tree! Thanks for this idea.
