This looks wonderful!  All the colors.  And the thought of the creamy buttery avocado combined with the sweetness of the fruit and tartness of the line makes it a great dish to try.  I think that I could eat it as a salad on a bed of spinach.  Hmmm.

This looks wonderful!  And talk about perfect timing.  I have chickpeas and avocados left over from making guacamole and humus yesterday.  I will have to switch out red and green leaf lettuce for the spinach.

Gourmet Grilled Cheese Sandwich for Dinner

All I can say is OMG!  This looks so wonderful!  And it proves that a grilled cheese sandwich isn’t just a slice of cheese slapped between two slices of bread.

 

Though to be fair, grilled cheese was a treat in my family.  My parents were Catholics in the real sense.  They believed in social justice.  Went to church every Sunday, not just Christmas and Easter.  And they held to the practices of the seasons of Advent and Lent.

 

I am old enought to remember not being allowed to eat meat on Wednesdays and Fridays during Lent.  Grilled cheese sancwiches were a special treat that my dad would make for us.  What he did was simpler, but somehow they were always perfect.  Here is a more deluxe version of grilled cheese!

Gluten-Free Black Bean Brownies

On a day that I was in the mist of search for gluten muffins, I saw this recipe for gluten free brownies.  First off, I love all things chocolate.  Secondly, how do you make great brownies gluten free?  Black beans!  Hmm.

It makes sense.  I use legumes like chickpeas as a binder when I bake.  Buckwheat flour and rice flour start off as hard kernels.  Why the heck not beans?  And they are a great protein source.

One thing though.  Don’t tell anyone what you are doing!  LOL!

He calls avocado the “green food of the Gods”  and he is right.  The creamy buttery taste of avocado is sublime.  I love it since I was a little kid.  We always had it when my mom did Mexican.  With avocados being so expensive, she could stretch what she could afford by making guacamole.  Yum.

 

Not only do avocados taste so good, but they are incredibly good for you.  I can’t stress how much good cholesterol(HDL) they have.  This helps removes the bad cholesterol so you decrease your chances of heart disease.  Definitely the food of Gods.

Guacamole Deviled Eggs

This is definitely a healthier deviled eggs recipe.  Mayonnaise is replaced by avocado.  Did you know that avocados are one of two fat sources that has HDL or good cholesterol in it?  I think the other is coconut oil.

 

Why do we like HDL?  Well, HDL is like a vacuum cleaner.  It sucks up LDL(bad cholesterol) and carries it out of the body.  High levels of LDL leads to heart disease, which is the number one cause of death in Americans.

 

So, if you can find a luscious  recipe like this that will make you healthier, shouldn’t you try it?
