I am going over to a friends how for Sunday breakfast and I always bring something. The problem is that I was too lazy to go shopping yesterday. So what do you do? Especially if you want to have enough for six kids?
I go into my freezer where I always have some kind of frozen fruit. Today it was raspberries. So I made 2 dozen raspberry lemon muffins and we are good to go!

I started posting muffin recipes on a few weeks back on Saturdays, because I wanted to give people an easy & fast meal for Sunday breakfast/brunch. Family meals are really important. These days it is difficult enough to find time together. We have crazy schedules and a lot of demands on our time. Sunday might be the perfect day to correct that . And breakfast or brunch is great, because you can catch family before they get out!

My husband loves biscuit and gravy. I had never thought of pairing chorizo with them. I am definitely going to try this the next time make this. I make my own chorizo. I use the Yves soy crumbles and season them. I use this mixture in burritos. Taco salads. Omelets. This is a new idea for me. Thanks for adding to my meal options!

I love anything with carrots! Carrot muffins are my favorite. The problem has been with carrot muffins, they tend to be heavy in fat. This recipe looks good in that regards. Less fat due to the yogurt. I love how it looks too. Dark and spicy and rich. I can’t wait to try this!

What a wonderful apple sauce for the holidays! I love the addition cinnamon and cranberries. Kids will love it on their pancakes and toast. I would love it in the parfaits that I make for Jim and I(layered vanilla yogurt, fruit, and grapenuts).
Sorry that I am so late posting about our weekend. I learned a valuable lesson this weekend. Don’t ever upgrade you Computer OSX if you think you are going to need to use your computer. Apple put out a new upgrade to the Mac. OSX. I had the bright idea to upgrade the system on Wednesday, see as how Jim would be home.
I am definitely not a tech person. So I need someone here to help if things go wrong. That is definitely Jim! Needless to say, everything went fine with the upgrade. The problem is that there were so many changes, that I had to spend a couple of days figuring everything out! I think I have it now!
We had a wonderful holiday. Our breakfast was perfect. I actually didn’t know what we were going to have until the last minute. We decided not to have an elaborate Thanksgiving. It was just going to be Jim and I this year. We thought we would just go with the flow. Read the rest of this entry »

Guess what Jim is having for breakfast this week? We had been peaking into our freezer yesterday. I realized that I had half a shelf of frozen bread!
I started looking for recipes to use that stale old bread up and found about 20 of them. However, I ran across this recipe and thought “this is the one!” So here comes Lemon French Toast!
