This week has been pretty hard on my diet.. I have probably eaten about 4 times what I normally do. A lot more sugary items have found their way onto my table. I am actually craving a good salad right now.
This salad does have a little sweetness(squash, agave, and vinegar). However, that is balanced with the quinoa, beans, and Brussel sprouts. I do have a weakness for Brussel sprouts. Though I think that I would roast them. This looks like a great salad to try!

This is a wonderful recipe! I have made this and this is the only way my husband will eat brussel sprouts. The roasting seems to caramelize them taking away the sulphorous taste. I do add rosemary to the this. It has become a treat in our family.
