I hadn’t realized until a few weeks ago that more and more people are looking for gluten free foods. And recipes. I had made some dishes for a reception that were labeled “gluten-free”. People gravitated to them and they were gone by the end of the reception.
Ever since, I have been on the look out for recipes that are “gluten-free”. So when I saw one for cupcakes without flour? Interesting. I checked it out and they right! Better yet, they were chocolate(one of my serious weaknesses). I am saving this one!

Gosh! These look soooo good! I love chocolate and I love coconut. What a great combination.
Initially, I thought about doing this for Fat Tuesday. Now,I think that maybe Valentine’s Day would definitely be better! Don’t forget that Valentine’s Day is exactly one week from today!

There has always been a weakness for chocolate cake in our house! Especially the super dark rich kind. My son always wanted chocolate cake with strawberry ice cream for his birthday. This recipe brings back those memories!
Just for your information, 160 degrees C is 320 degrees Fahrenheit.

I don’t know about cold and wet weather with living on the Gulf coast, but these look perfect for any time! I saw the photo and fell in love with this recipe! I love the idea of the chocolate on the spoon. The sprinkled with little bits of crushed candy cane make me want to dig right into it.

I have a lot of vegan friends who would love this recipe. A fudgy brownie that is crispy on the outside. She gives you the low down on aquafaba(chickpea liquid) and vegan egg, which I have got to try.
This post started me thinking of the brownie contest scene in Notting Hill. Julia Roberts, Hugh Grants, and friends trying to tell the saddest person story. Pretty funny!

If you’re are looking for something different to serve for your Thanksgiving dessert, this might just be it! This turtle pie looks luscious and delicious. And super easy to make. A big plus when you are making that big dinner for everyone.
I always like to have something along with the mincemeat and pumpkin pies that I serve. This just might be it.

I have always had a weakness for chocolate. Especially for chocolate pudding. My mom would by those Jello pudding cups and if the flavor was chocolate, they were gone the next day! Needless to say, my mom started bringing different flavors home.
And this recipe is great if you need to be gluten free! Did you know that buckwheat is not a grain. It’s a fruit seed. From the rhubarb family. So this recipe is vegan, low fat, and gluten free! What more can you ask for?
