I think that wraps are one of the greatest inventions in recent food history!  Just slap something on them and roll them up.  I love the chewiness of the wraps compared to bread you get in the store.

And this looks absolutely fabulous.  And I know that salty creaminess of the Feta will blend so well with the sweet butternut squash.  What more can you ask?

Valentine Mosaic Jello

I love this recipe!  It reminds me of “wigglers” which my son and I would make when he was little.  The jello is so concentrated that you can easily pick it up with your hands and it doesn’t melt.  We had little molds that we would pour the mixture in.  Different molds for different seasons and holidays.  I think this recipe would be wonderful to make with your child for Valentine’s Day.

The other day, I had been running from pillar to post.  I had forgotten to eat anything for breakfast.  No lunch either.  So about 4 p.m. I weakly walked into a local HEB(Texas Supermarket).  I didn’t want just fruit.  That would just spike my blood sugar for a little bit.

 

I needed protein and fat.  Lots of it!  I thought why not Trail Mix?  I went to that area.  What they had was pretty disappointing.  The mixes all had some form of candy in them.  Chocolate chips.  M&Ms.  Not my kind of thing.  I eventually did buy a bag and picked out all the chips.

 

I decided that I was going to start making my mix and taking a bag with me when I went out.  The next day, I saw a this post.  Talk about coincidence!

Roasted Root Vegetable Galette

One of the most wonderful things to eat are roasted vegetables!  When you roast vegetables, the flavor is much more intense.  And the roasting caramelizes the vegetables, so that they taste sweet.

 

I never had them before I became a vegetarian.  Once I had them, I was hooked and now we have them several times a month.  One of the perks of going vegetarian was finding new ways to prepare food!

Spicy carrot soup with ginger, coconut milk and toasted black sesame seeds

This looks so delicious.   A totally vegan spicy soup that you can serve to anyone, and I think they would love it.

Carrots are a big hit in my family.  My son loved them.  I would sit him down with raw carrots and thousand island dressing.  The carrots were for scooping up the dressing.  We loved them in salads.  Carrot cake is one of my favorite desserts.

Carrots are good for you, full of beta-carotene.  That helps with the eyesight.  Really a problem as you get older.   You do have to be careful.  I had a friend when I was younger, who’s eyesight wasn’t all that great.  She thought that if she ate enough carrots, she wouldn’t have to wear glasses anymore.  What happened was that she turned orange.  And it didn’t help her eyesight all that much.

The Ultimate Fall Salad

This week has been pretty hard on my diet..  I  have probably eaten about 4 times what I normally do.  A lot more sugary items have found their way onto my table.  I am actually craving a good salad right now.

 

This salad does have a little sweetness(squash, agave, and vinegar).  However, that is balanced with the quinoa, beans, and Brussel sprouts.  I do have a weakness for Brussel sprouts.  Though I think that I would roast them.  This looks like a great salad to try!
