Doesn’t this look wonderful? When we were kids, my mom would make us a red velvet cake for special occasions. A real Red Velvet cake is made with cocoa and buttermilk and butter. It is very tender and moist. And to me, it tasted like a red devil’s food cake. The only other cake that my made that was better was her Million Dollar cake!
I saw this post and thought what a great idea. A southern Ben & Jerry’s type of recipe. The recipe does call for Mascarpone cheese. It’s Italian cheese or thickened cream really. You can get it at any supermarket. Red velvet cake? I am not so sure, but it’s worth a try to look!
What can I say? I love reading yadadarcyyada. Today’s blog really has me spinning. I have been thinking about decisions made in the recent past. Second guessing myself. After reading this, I am all “Oh what the heck? So I made bad decisions!” and I can shrug it off! Thanks Darcy!
I don’t know what kind of New Year’s resolutions(I am not a believer in them) you might make, but I know that I always make a resolution for healthy eating. And I do this throughout the year.
I think that vegetarian can be pretty healthy. Though I have vegetarian friends that are anything but healthy. One of them can’t give up fried food. She loves fried mozzarella. Fried hush puppys. You get the idea. The sad thing is that she’s a nurse.

I am not really saying Bah Humbug!, but I am counting down the days until Christmas gets here. I said last week that our holiday season had been a mad whirl! It continues to get crazier each day.
This year, I decided to get out there and enjoy any thing that came my way. And I have. Parties. Coffee with friends that I needed to catch up with.
I also decided that I wanted to spend more time helping others this year. I have volunteered for a lot of groups. Mainly ones involving children. I start my final group today, Blue Santa. For the next 3 days, I am going to be wrapping gifts for kids who might not have a Christmas otherwise. It makes me feel pretty good.
I started thinking about how many gifts that is though. Overwhelming! Then I read this post. Some of the quotes are inspirational. Others are sooo funny. I just finished laughing off my head.

Today has been pretty busy. The holiday season is in full swing. It’s the first day of Hanukkah. We went to a Christmas Party this afternoon. And we then took off to do a little biking. It was a beautiful late afternoon on the Island. Perfect weather for biking.
So tonight we are staying in. I thought it would be as good a time to solve the riddle of the Rubik’s cube.
Did you ever watch the Will Smith movie Pursuit of Happyness? There is a scene where Will Smith solves the rubik’s cube puzzle in the time it took to take a cab ride. What’s the big deal? It got him a job interview. Wish life worked that way.
I woke up today and it was a wee bit nippy! Later I checked the weather report and saw that we are in the 50s today. Later this week we are going to start dropping into the 40s. Brrr. I do realize how much luckier we are than other parts of the country like South Dakota or Illinois. We could be sitting in a bunch of snow and freezing temperatures right now.
We’re not and it doesn’t stop me from thinking about things like hot apple cider. Or hot cocoa topped with marshmallows. Though I tend to skip the marshmallows. Have you ever read the ingredients on the package? I have.
I might just change that! I was going through my email and found a post that Lana from Once Upon A Spice sent out. I took one look and said wow! Marshmallows! They look wonderful and easy to make. Something I am going to try.
