One of the most wonderful things to eat are roasted vegetables!  When you roast vegetables, the flavor is much more intense.  And the roasting caramelizes the vegetables, so that they taste sweet.

 

I never had them before I became a vegetarian.  Once I had them, I was hooked and now we have them several times a month.  One of the perks of going vegetarian was finding new ways to prepare food!

Roasted Brussels Sprouts with garlic

From Cooking Without Limits!

 

This is a wonderful recipe!  I have made this and this is the only way my husband will eat brussel sprouts.  The roasting seems to caramelize them taking away the sulphorous taste.  I do add rosemary to the this.  It has become a treat in our family.

A wonderful combination of roasted sweet potatoes, purple onion, and miso.  What is miso?  It’s a flavoring ingredient made from soybeans that had gone through the fermentation process.  You can buy it at any health food store, as well as places like Trader’s Joe and Whole foods!  The Tasteful Muse has other miso recipes!

I found this blog this weekend from the MeetNGreet blog post put on by Dream Big, Dream Often.  Great event by the way!

WFDM is a mom who is trying to get her family to eat healthy, while making it a fun eating experience.  She had a big challenge thrown at her recently.  Go and check out her blog as to what it is.

She has some great vegetarian recipes.  I was going to post her veggie pizza with creamy garlic sauce.  However, I saw this roasted vegetable recipe.  I LOVE roasted veggies.  This looks like a great way to get your kids to eat more veggies!

French Lentil Soup with Mint and Roasted VegetablesMy husband Jim, loves soup.  To him, it’s the ultimate in comfort food.  He would eat it every day and I think for every meal if I let him.  I won’t let him.  I asked him today what he wanted for dinner.  It’s 95 degrees out.  What do you think his answer was?  Soup.  So, he’s getting soup.  LOL.
