It is getting hot on Galveston Island.  It looks like we are going to stay in the mid 90s over the next week.  So!  I decided to do a replay of my Classic Cold Noodles with Peanut Sauce.

This is spicy and crunchy.  The salad always tastes better the next day!  The recipe makes a big batch that is several dinners for two

I know that I have talked about this before.  We have a ton of fennel in our back yard.  It started with one plant and has really taken over.  In the spring we have masses of feathery  and fern like branches.  That’s when the bulbs are at their best for eating.  Then we get glorious flowers that the bees just love.  These flowers become seeds that I use for seasoning my dishes.  I just love fennel.

 

Here is a recipe which uses the bulb.

This looks wonderful!  All the colors.  And the thought of the creamy buttery avocado combined with the sweetness of the fruit and tartness of the line makes it a great dish to try.  I think that I could eat it as a salad on a bed of spinach.  Hmmm.

This looks wonderful!  And talk about perfect timing.  I have chickpeas and avocados left over from making guacamole and humus yesterday.  I will have to switch out red and green leaf lettuce for the spinach.

The Ultimate Fall Salad

This week has been pretty hard on my diet..  I  have probably eaten about 4 times what I normally do.  A lot more sugary items have found their way onto my table.  I am actually craving a good salad right now.

 

This salad does have a little sweetness(squash, agave, and vinegar).  However, that is balanced with the quinoa, beans, and Brussel sprouts.  I do have a weakness for Brussel sprouts.  Though I think that I would roast them.  This looks like a great salad to try!

Glad to see you back!  And a new recipe.  I see that you have been doing a LOT of posts on running lately!  Congratulations on your news.  A move is always fun!  And going to grad school?  Good luck.  I know that you will love it.

 

This recipe looks wonderful.  I love kale and butternut squash.  I do have a question.  With the tempeh is there a big difference in the texture of the bacon and the regular?

 

This salad looks great for a Saturday lunch after biking.  Guess what Jim is getting this weekend!

Jim’s Parmesan Pesto CousCous

CouscousWe had a LOT of rain last weekend.  The result was Jim cooking up a storm.  One of the dishes he made was a pesto Parmesan couscous.  Sooo good! 
Jim discovered couscous on one of his business trips to France.  It’s really big there, but as a side dish.  One day, we stop in Eatsy’s, a grocery store up in Houston.  They had this dish there.  We loved it and replicated it at home.  I hope you like this!

Toasted Walnut, Kale and Quinoa Salad

What a beautiful salad.  And it fits so well in with my plans.  For years, Jim has been telling me that there is no way he would want to eat quinoa.  Suddenly, about a week ago, he told me that we ought to give quinoa a try.

Yesterday, I thought that I better strike while the iron is hot a find a recipe to make next week.  Voila!  I stumbled on this one.  I love the idea of a slightly sweet and tart dressing with the saltiness of feta.   It’ll work!

Warm Ravioli and Arugula Salad w/ Shallot Dijon Vinaigrette

I am still looking for lighter meals for this week.  Confession, after all the cakes and candy of last week, I really don’t feel like eating.  However,  I kind of stumbled on this ravioli recipe.  It looks so good.  It’s light.  I think that it would work equally well with spinach.   A wonderful change for right now!
