From Peachy Tales!

I am addicted to traveling to far away places.  Especially places, that seem out of the way.  Places that few people know about!  I saw this post about a spicy salsa, that sounded so yummy.  When I checked out Peachy Tales blog, I found that she was from Mauritius!

I don’t know a lot about the Islands, but as Jim says “Google is your friend!”  It’s in Africa. The Mauritian Culture is incredibly diverse.  The religions are diverse.  And everything is reflected in their cuisine.  I so want to go there now!

Enjoy!

Mangiare! Mangiare! ( Eat! Eat! ) Those were the words that my Mama would always be screaming to me back during my childhood days. I still recall how I used to hate eating tomatoes back then may it be when Mama makes piquant salsa, or just plain red sauce. Now there is no greater fan […]

From I Want To Cook That!

The first time that I ever ate fire roasted tomatoes was at a international food fair.  It was a bruschetta.   I thought that I had died and gone to heaven.  The intensity of the tomatoes with a smoky undertone.  I loved it.  I loved it even more when I found out that these were canned tomatoes.  I could use them anytime of the year.

Enjoy!

Summer in a bowl! This avocado salsa is tasty & fresh, with sweetness coming from fresh fruit, creaminess from avocado, fragrance from mint & zesty bite from lime juice. It is a great accompaniment to salads & with burgers & falafels. It’s vibrant colours mean that it is always a hit at parties esp. […]

This looks wonderful!  All the colors.  And the thought of the creamy buttery avocado combined with the sweetness of the fruit and tartness of the line makes it a great dish to try.  I think that I could eat it as a salad on a bed of spinach.  Hmmm.

Enjoy!

Tomatoes & Capers SalsaGrilled Japanese Eggplant with Tomato-Caper Salsa

This is a 30 minutes to the table dinner that Jim made this weekend!
We grill our vegetables a lot.  The smoky flavor along with the caramelized vegetables are memorable.  I remember the best meal I ever had was 2 weeks after Hurricane Ike.  We had been eating MREs(meals ready to eat).  I was grateful for them, but as a vegetarian, my options were severely limited.  Eating the same thing over and over is not my thing.
