A repost of a recipe I did last year!
Now that it is starting to cool down here on the Gulf Coast, I am starting to thingk about baking again. I don’t know about you, but even with the air conditioning I don’t feel like baking too much. Between the heat and the humidity, it gets kind of oppressive. We are back in the 80’s so it time to make some goodies again.

About a year ago, I was in this muffin craze. I was trying all kinds of muffin recipes. Apple, banana, blueberry. I even came up with some recipes for muffins that were low fat and low sugar for some of my friends who have diabetes.
I love them all. They are fast and easy to make. You can use bananas and apples or anything that is past their best used by date. They are a winner for everyone!

I am always amazed by the fact that I have found such a good friend as Denise while blogging. She is truly what Anne Shirley of “Green Gables” called a kindred spirit. I love reading her thoughts in her posts. If I don’t have time, I save them until I can be alone. She feeds my soul.

What a wonderful apple sauce for the holidays! I love the addition cinnamon and cranberries. Kids will love it on their pancakes and toast. I would love it in the parfaits that I make for Jim and I(layered vanilla yogurt, fruit, and grapenuts).
Sorry that I am so late posting about our weekend. I learned a valuable lesson this weekend. Don’t ever upgrade you Computer OSX if you think you are going to need to use your computer. Apple put out a new upgrade to the Mac. OSX. I had the bright idea to upgrade the system on Wednesday, see as how Jim would be home.
I am definitely not a tech person. So I need someone here to help if things go wrong. That is definitely Jim! Needless to say, everything went fine with the upgrade. The problem is that there were so many changes, that I had to spend a couple of days figuring everything out! I think I have it now!
We had a wonderful holiday. Our breakfast was perfect. I actually didn’t know what we were going to have until the last minute. We decided not to have an elaborate Thanksgiving. It was just going to be Jim and I this year. We thought we would just go with the flow. Read the rest of this entry »

Guess what Jim is having for breakfast this week? We had been peaking into our freezer yesterday. I realized that I had half a shelf of frozen bread!
I started looking for recipes to use that stale old bread up and found about 20 of them. However, I ran across this recipe and thought “this is the one!” So here comes Lemon French Toast!

Growing up, I learned to love breakfast and brunch meals. Money was tight in my family. With six people, my parents stretched a dollar a long way. When money was really tight, my mom would serve breakfast dishes for lunch or dinner. This hash dish was reminiscent of one my mom would make. She would have the sauteed vegetables. A friend gave me bananas from her tree. Talk about sublime! Store bought bananas are no where near as good. Creamy adn a mild, slightly sweet taste Nothing overpowering. Well, Jim got the last banana which he took to work on Monday. He forgot to eat it. When he checked the banana on Tuesday, it was a little too ripe. Instead of throwing it out, I decided to make my favorit banana recipe. Bananas Foster. Absolutely Divine!
