Glad to see you back! And a new recipe. I see that you have been doing a LOT of posts on running lately! Congratulations on your news. A move is always fun! And going to grad school? Good luck. I know that you will love it.
This recipe looks wonderful. I love kale and butternut squash. I do have a question. With the tempeh is there a big difference in the texture of the bacon and the regular?
This salad looks great for a Saturday lunch after biking. Guess what Jim is getting this weekend!
Jim is really adventurous when he cooks. He likes to try new dishes. Mainly to try new ingredients! This comes from him coming from a family that ate steak 6 times a week with a pot roast on Sunday. And no, the steak was not filet mignon! It was just what his dad liked and so his mom ate it.
Jim did change that when he got into his teens. He learned how to cook and then just made what he wanted. At first it was just him eating his cooking. Then his parents and sister would sneak little tastes of everything. By the time I met him, they had a lot more variety in their meals.
Originally, I was going to share Bubbles and Booyah’s Tomato and cucumber meze platter. I was reading the ingredients for the platter and saw one of them was a link to spicy tempeh. I clicked. It was a recipe on how to cook the tempeh.
Now, I have never been a fan of tempeh. Mostly, it was due to the fact that I don’t know how to prepare it. I read the recipe. It’s looks scrumptious. Like something that I would really enjoy making AND eating. And it’s easy! So here you go!
