Sweet Potato Chiplote Bisque

The last time I posted this soup, I was whining, because the weather was in the 60s and going to drop to the 50s.  Right now it is 50 degrees and going lower.  Tomorrow will be even colder.  This is our winter right now.  So what better than a bowl of Sweet Potato Chipotle Bisque?  Pure comfort food for Jim and me!

Jim and I have been hibernating today.  The after effects of Hurricane Patricia are still with us.  Who would have thunk that a hurricane in the Pacific would have this big an impact?  It’s been raining since early yesterday morning.  We go a lot of rain.  Not the 18 inches that had been expected.  But a good amount.  Overall, it wasn’t as bad as it could have been.  Some flash flood warnings.  If you are smart, you just stay home.

One good thing that happened was that with all the heavy winds, most of the dead fronds came off my palm trees.  Those trees is about 50 feet tall and still growing.  I had been planning on getting my tree guy to come and clean off the tree for winter.   Not now.

With the rains the temperature is dropping.  It’s about 66 now and will get a lot cooler.  Jim just told me that the wind was 37 miles per hour.  This is not our usual October weather.  It is definitely soup weather.  I pulled out my recipe for Sweet Potato Chiplote Bisque.  I have been making this soup for awhile.  I actually do it in the summer.  It is such a great soup.  I love the sweetness of the potato with the kick from the chipotle pepper. 

I originally got the recipe from Creative TV’s show ‘Vegan Mashup’.  So yes, this is all vegan.  You can use regular dairy products and it will turn out fine.  Later I found the recipe on line at The Vegan Latina. Read the rest of this entry »

It’s January~Diet Time!

Last night, we went to a church meeting.  We pulled into the parking lot and it was packed.  Yikes!  Our meeting wasn’t that exciting, so what was happening?  Well.  It turned out that it was the first meeting of Weight Watchers for 2017.  Everyone is ready to get rid of the excess poundage that the holidays brought.

Spicy Sushi Bowl — Vega Table

I am a sushi fanatic.  Before I became a vegetarian, I use to love going out for sushi after work.  When I did become a veg head, I thought that I would never eat this again.  However, a few years back, The Sky Bar opened up on the island.  It was an indian/sushi bar restaurant.  What a combination?

They have lovely vegan sushi.  Along with their vegetarian spring rolls, the sky bar is my place that I go for special treats or celebrations.  I happened on this post today.  A sushi bowl.  Yummy.  And a lot of the ingredients are similar to the sushi I get at the restaurant.  I have got to try this.  And soon!

Being Enough

I have been dealing with someone lately who seems to think that in order to feel respected, he needs to get expensive gifts. It made me think about this clip from the movie “Cool Runnings.”

John Candy tells Darice that if you are not enough without it, you will never be enough with it.

So many people get caught up in getting awards.  Fancy cars.  Expensive gifts.  It’s almost like a drug.  They are constantly looking for the next fix.

I have been thinking about setting intentions this year.  Not coming up with goals. Instead,  I want to look at how I live my life.  What do I intend to do this yea?  I want  to simplify my life.  Declutter it of things and people that don’t bring me pleasure or peace.

No Dreamz Too Big!

Have you ever watched the movie Rudy?  In it, his friend Pete said “that dreams are what makes life bearable.”  What a lovely thought.  And as for Rudy, he was a small guy that had been told he wasn’t college material and there was no way he would ever be part of The Fighting Irish!  He didn’t let that stop him.  I followed his dreams.  And he got them.  If you get a chance, go watch the movie Rudy.  You won’t be sorry!
